Meatballs are probably the best-known food to come from Denmark. Depending on when and where you are in Denmark, you can find all kinds of different meatball recipes, including Boller i karry, a recipe which involves pork meatballs, mild curry and fluffy rice.

Ingredients

For the meatballs:

  • 500g of ground pork
  • 1 large diced onion
  • 1 egg
  • 1 cup of milk
  • 45 grams of all-purpose flour
  • 2-3 tsp of salt
  • Pepper

For the curry:

  • 1 medium onion, diced
  • 2 tsp of curry powder
  • 1 diced apple
  • 2 ½ tbsp of all-purpose flour
  • Butter or oil for frying

Directions

  1. Start making your meatballs by peeling and dicing your onion. Mix the onion with the ground pork, egg, milk, flour, salt, and pepper, ensuring all of the ingredients are thoroughly combined.
  2. Use a tablespoon and your hands to create small balls from your meatball mixture and place them to one side.
  3. In a large sauce pan, boil around a liter of water and drop the meatballs into the boiling liquid.
  4. Boil your meatballs for around 10 minutes, then use a strainer to drain the water away. Save the water you used to boil the meatballs for your curry sauce.
  5. To make the sauce, peel your onion and apple and dice both.
  6. Add some oil to a sauce pan and fry the diced onion for a minute or two, until they begin to caramelize.
  7. Add your curry powder, and flour, and mix until you have a paste-like consistency. Gradually add the 2.5 cups of water from your boiled meatballs and mix until you have a thick sauce.
  8. If you prefer smooth curry, you can use a hand blender to blend the curry mixture and get rid of any remaining apple and onion chunks.
  9. Add your meatballs to the sauce and allow them to cook for around five minutes, while you’re cooking your fluffy basmati rice.
  10. To serve, place a heap of white rice onto a plate and pour a healthy spoonful of curry and meatballs on top.

Background: Origins of boller i karry

Curried meatballs may seem like a somewhat unusual dish for people visiting the country. While meatballs are distinctly Danish, curry and white rice are often associated with other parts of the world.

Despite this, the meatball and curry dish mentioned above is a firm favorite among many Danish families. Some even serve this dish as part of a collection of foods for the festive season.
